As the summer becomes fall and fall begins to edge to winter, wine drinkers may be transitioning from crisp whites and dry rosés to big reds (or not for those of you who power through summer with big reds).

 ROMAN, PEASANT OR BARBARIAN?

In ancient Rome, undiluted wine was called merum.  Any self-respecting Roman always mixed his wine with water before imbibing, as drinking merum was deemed a bad habit practiced by unsavory peasants and barbarians.

Romans typically mixed one part of wine with two parts of hot water or sea water to dilute and offset the sweetness in the wine.

Fortunately for us, David does not align himself with this ancient Roman practice; no undiluted wine or sea water is sold at Water Tower Fine Wines.

 PORK CHOPS WITH APPLES
Usher in fall with the combination of savory and sweet flavors in this dish.  Jan suggests a riesling to pair with this meal.  The richness from the pork  balances the acid in a riesling.  Many rieslings have notes of apples and fall fruits, which mirrors the flavors of this dish. 
7 tablespoons unsalted butter, softened and divided
2 tablespoons real maple syrup
½ teaspoon cinnamon
1 tablespoon minced fresh sage
1 teaspoon fresh rosemary (more to taste)
Salt and pepper
4 (6- to 8-ounce) boneless pork chops, 3/4 to 1 inch thick, trimmed
2 Granny Smith or other tart apple, peeled, cored, halved, and cut into 1/2-inch-thick wedges
1 red onion, halved and sliced thin
1 tablespoon brown sugar
1 tablespoon white wine vinegar

Combine 4 tablespoons softened butter, 1 tablespoon maple syrup, sage, rosemary, 1/4 teaspoon salt, and 1/4 teaspoon pepper in bowl; set aside.

Pat chops dry with paper towels and season with salt and pepper.

Melt remaining 2-3 tablespoon butter in 12-inch skillet over medium-high heat. Sear chops and cook until well browned and meat registers 140 degrees, about 5 minutes per side. Transfer to platter and tent with foil.

Pour off all but 1 tablespoon fat from skillet. Add apples, onion, brown sugar, cinnamon, and 1/4 teaspoon salt and cook, covered, over medium-low heat until softened, about 6 minutes. Stir in vinegar and remaining 1 tablespoon maple syrup and cook, uncovered, until apples start to brown, 2 to 4 minutes.

Add any accumulated pork juices into apple-onion mixture and drizzle over chops. Dollop chops with maple/sage/rosemary butter. Serve.

JAN’S WONDERFUL BAGELS AND FOCACCIA

Jan’s focaccia is a sourdough base full of air holes and a nice chewy texture, saturated with olive oil and fresh ingredients like rosemary, Asiago, Parmesan, crushed peppercorns and flaked salt.

Her bagels are also sourdough, boiled and baked with a variety of toppings and loaded with ingredients such as Parmesan, peppercorns, poppyseed, sesame seed, dried figs and walnuts and of course, the everything bagel topping.

Jan’s products are chewy with a hint of tanginess from the sourdough.  These are a labor of love; because of the sourdough method Jan uses, both breads take 2-3 days to complete.
