Spring Pasta
Usher in Spring with this Recipe and Wine Pairing
Jan’s Wine Suggestion:
A good Gavi complements this dish handsomely. The
stony minerality of this wine pairs wonderfully with the richness and creaminess of the sauce.
8-10 oz. fettucine
3 cups warm milk
¾ cup grated Parmesan
1 medium shallot, minced
8 oz. good quality ham or prosciutto, diced
2 tablespoons butter
2 tablespoons flour
1 clove garlic, minced
1 cup green peas, thawed
1 teaspoon salt
½ teaspoon white pepper
1/8 teaspoon nutmeg
Cook pasta according to directions. Drain, saving the water
Brown ham and shallots in large saucepan
Add minced garlic and sauté for a couple of minutes
Place in bowl and set aside
In same saucepan add butter and melt
Add flour to melted butter; stir to mix and cook 2-3 minutes
Slowly add warm milk using whisk
Stir until smooth; if you have lumps, you can pour through a fine mesh strain, then place back into the saucepan
Add ¾ cup Parmesan
Continue to cook until thick; add peas and ham to mixture
Add the drained pasta and, if necessary, add the pasta water to desired consistency
Toss to coat
